Ingredients

  • 4 4 oz. Salmon Filets
  • ½ cup Dry White Wine
  • ½ cup Whipping Cream
  • ½ cup Chopped Shallots
  • 1 Tbsp. White Wine Vinegar
  • ½ tsp. Dried Thyme
  • ¾ stick Unsalted Butter, Chilled and cut into 1T pieces
  • 1 ½ tsp. Fresh Lemon Juice
  • 1 Green Onion, cut into thin slices

Directions

1. Heat Oven to 375℉
2. Place Salmon on aluminum covered shallow backing sheet. Skin side down. Salt & Pepper to taste. Cook about 20 minutes, until done.
3. Remove fish leaving skin stuck to foil. Boil first 5 ingredients on list on high heat until boiled down to ~½ Cup. Strain sauce through fine strainer, pressing out juices from shallots through strainer. Whisk in butter over heat one Tbsp at a time. Then whisk in Lemon Juice until thick, poor over Salmon. Garnish with green onions.
